Ten to three, told honestly: when the bar is best, when the floor starts and what the last hour is for.

The house opens at ten and closes at three. Five hours, and they are not interchangeable — each one has a different room inside it.

Ten to eleven · the bar hour

The quietest hour and, for a lot of people, the best one. Fourteen seats at the bar, the first records under a hundred and ten beats, and enough space to order by feel and get a conversation about it.

If it is your first time, this is the hour to arrive. The room is easier to read before it fills.

Eleven to one · the turn

Tables fill, the tempo comes up, and at some point between half past eleven and midnight the room stops being a bar and becomes a floor. Nobody announces it. It is the single most satisfying thing to watch from behind the bar.

One to three · the floor

Longer records, fewer words, and whoever stayed is close to the booth. On long nights the closing hour is not announced and the house plays until the room is done.

The kitchen of all this: no jump in volume, no change in the light, and nothing on the schedule that tells you the night is over except the night being over.
