A clarified drink looks like water and tastes like the thing it came from. There is no trick in the glass: the work happened two days earlier, in a fridge, with nobody watching.
What clarifying actually removes
Milk, acid and time separate what gives a drink its weight from what gives it its flavour. The weight is strained out; the flavour stays. What is left goes down clean and lasts an hour instead of ten minutes.
It is also why these drinks arrive cold and stay cold. There is nothing left in them for the ice to break.
How to order one
Ask what is clarified tonight. The answer changes with what came in that week, and there are usually two on the list — one built on tequila and one on mezcal.
If you like a drink that is short and sharp, this is not the one. If you want something you can hold through a set without it going warm, it is.
